Chef Dustin Valette and his culinary team have crafted an evening that moves from delicate and bright to rich and indulgent, with each course building on the last. Begin with citrus-cured Hawaiian Kampachi adorned with shaved sunchoke, blood orange brodo, and sake-infused steelhead caviar—a study in precision and elegance. Move into crimson rouge celeriac soup with house-cured gravlax, heirloom beet, rye brioche crouton, and a delicate dill salad that balances earth and ocean.

The third course showcases local petrale sole prepared with beurre noisette, Meyer lemon, creamed mustard, and roasted chestnut—a love letter to winter on the Northern California coast.
